Meatless Mondays: Veggie Quinoa Bean Salad

Nothing beats a quick & easy dinner on a Monday evening. Here is one I have been loving for Meatless Mondays and perfect for lunches the rest of the week!


  • 200 g of Quinoa (dry)

  • 2 cups of vegetable broth

  • 1.5 cups of Black Beans

  • 1.5 cups of Chickpeas

  • 2 bunches of Asparagus

  • 2 Red Peppers

  • 2 Yellow Peppers

  • 4 Large Carrots

  • 1 tbsp Olive Oil

  • Salt & Pepper to taste


  • 3/4 cup of Olive Oil

  • juice from 1 Lemon

  • 1 tsp Honey

  • Salt & Pepper to taste

  • 1/4 cup of Apple Cider Vinegar

Add ins: Avocado, Olives, Sun Dried Tomatoes, Feta Cheese, Tempeh and other veg. *I love it with hot sauce too!


Bring two cups of vegetable broth to a boil. Stir in 200g of quinoa and cover for 12-14 minutes. Cut up asparagus, peppers and carrots and saute in olive oil. Drain and rinse chickpeas and black beans. When quinoa has cooled combine with veggies and beans. Makes enough for 3-6 meals. Store in fridge and dress as needed.
